Carrot cake is made from scratch that’s moist, flavored and topped with cream cheese frosting.
How To Make Carrot Cake:
Ingredients:
Cake:
• 2 cups Self-Rising Flour
• 2 cups White Sugar
• 2 tsp. Ground Cinnamon
• 1/2 tsp. Salt
• 4 Eggs
• 3 cups Grated Carrots
• 1 cup Chopped Pecans
• 1 1/4 cup Vegetable Oil
Icing:
• 8oz. Cream Cheese, softened
• 1/2 cup Butter, softened
• 4 cups Confectioners’ Sugar
• 1 tsp. Vanilla Extract
• 1 cup Chopped Pecans
Instructions:
Preheat oven to 350 degrees and greased two round cake pans.
Cake:
In a bowl of stand up mixer , beat eggs and vanilla extract, sugar well combined. Then mix in the flour, salt and ground cinnamon. Stir in carrots and pecans. Beat well combined.
Pour cake batter into 2 cake pans and bake for 40 minutes until done. Let it cool for 10 minutes on cooling wire rack .
Frosting:
Im a mixing bowl , beat together butter, cream cheese, confectioners sugar and vanilla extract with a handheld electric mixer . Fold in pecans.
Assemble:
Lay first cake layer on a cake stand frost 1/2 of frosting on top and lay second layer on top, frost it.
